Corn Salad/ Mango Salad / Watermelon Limeade

After Dan and I got married, we embarked on a journey -well, a project. His friend would give us one of the most creative wedding gifts to date: a deck! This was Dan's goal to have a much nicer looking backyard and he was convinced that a deck would do the trick. I have to say, he was right! Maple Syrup Sabayon

Yes, it's a mouthful - in more ways than one. Trust me. It's worth it. 1. Mix 6 egg yolks with 1 cup of sugar  (I used maple sugar here as per request of a client) and whisk vigorously. Then continue to whisk over a double boiler ( bowl over a saucepan with a little water steaming underneath to gently cook the egg based sauce) 2.Once it reaches a pale yellow color & ribbon like stage. Infused Tea with Fruit & Spice

Lately, the weather is a little all over the place. For the days when it's hot & humid, give this a try. I had the pleasure of adapting this recipe from a previous client of mine.
