My mom is a fantastic cook. However small her repertoire, she just has that ability to cook with feeling. She knows flavor. I'll never forget the stories she always would share about how she didn't learn cooking from my grandmother, (Mamy Lucy) because she remembers was coming home from school and seeing spaghetti strands against the wall. Apparently, Mamy Lucy thought this would help her determine if the pasta was ready! My father taught my mother to cook, and although they are no longer ... continue reading...
(Crustless) Spinach, Mushroom & Cheddar Quiche
My idea of breakfast is not a sugary donut with raspberry jelly running down my arm. I admit it, I - like the rest of us- feel like I simply don't have "time". Ironically, we all have the same 24 hour period in a day. I want to start that day with something that I won't feel guilty about and will keep me full. I feel like Americans are succumbing to this whole "grab and go" idea like it leaves us no options. Oh...but there are many. Eggs are protein, and although they've had much ... continue reading...
Grilled Vegetable Lasagna
I am a Jew with Latin American background. While I do not observe all kosher laws, one of the things I don't do is mix meat with dairy. (This also includes poultry with dairy.) Creamy cheesy pasta with chicken? eww. I know from asking these questions myself, that many of the reasons behind these ... continue reading...
Lighter Sesame Chicken
When I think of sesame chicken, those pieces of chicken that are smothered in a cornstarch based, sticky sauce and sprinkled with sesame seeds comes to mind. No doubt it's delicious, but in this heat- I'd rather stick to something light that will cool me down. This dish is a good alternative to your average sesame chicken because it's healthier & lighter. The sweet & saltiness of the chicken is a nice match to the cold & crunchy iceberg lettuce. It packs great for lunch - just ... continue reading...
Granola With Coconut & Olive Oil
Granola is delicious, but it can get expensive. Making your own version can be rewarding - and save you a few bucks. This version is one that is similar to a recipe I once made for a client; she found it on the dining & wine section of the NY times. I like mine sprinkled on top of yogurt for a quick breakfast before work. If you mix it with fruit, it's super filling. The yogurt is creamy and slightly sweet - while the nuts give a crunchy texture and an unmatched nuttiness. When ... continue reading...
