Roasted Chicken with Tangy Citrus Dressing

This is a simplified version of a dish I made while working at a Southeast Asian restaurant. It originally called for kumquats - which are delicious, but are a bit laborious when taking out all of the seeds. I've simplified it and making it friendly for the home cook. This recipe is comprised of two parts which makes the dish what it is. It could work for a weeknight meal, and also makes a beautiful presentation if you are serving a crowd when ... continue reading...

Baking

Blueberry {Sponge cake + Crumble} = Spongle

I would much rather have something savory than something sweet. Plus, I am not much of a baker -- My concentration in school was culinary arts and all my experience has been in the savory kitchen. However, every once in a while you need a quick "something sweet" to pull out of your stash. I think this is the perfect one. This idea actually came from a client I had in Riverdale, NY. Every week, I would cook for her family & friends for Shabbat (Sabbbath). She told me that a friend of ... continue reading...

Roasted Chicken with Potato, Corn & Red Onion Smash

Sometimes out of pure experimentation, you can create something really great.  As much as I love to cook, I don't want to come home and cook something too elaborate after a long day. This meal literally came from whatever I could find.  The beauty of it, is that it was all cooked in one pan, which means there's only one to clean! (I'm sure Dan is very excited about that!) Ingredients: 1 package chicken cut in 8 pieces 1 bag frozen corn (approx 1 pound) 2 large red potatoes, ... continue reading...

Simple Vegetarian Soup W/ Earthy Spices

I was trained to chop everything I need all at once, that way you split up the steps of what needs to be done and you are not running around the kitchen. Everything in succession. Everything in order.  So, if you have 10 onions to slice, you would peel all 10, remove the skin from all 10, and slice all 10.  At first, it may seem that it is taking longer - but this has helped me with many tasks over time to just put my "head down and work". [repeated phrase in the culinary world] ... continue reading...

Italian Lentil Salad with Cucumbers, Grapes & Hazelnuts

I wanted to bring something different to our friend's bbq - which would probably the last bbq for the season. I had lentils in the pantry and thought to use them up this way. I searched for something unique and came across a recipe from Giada De Laurentiis. Saute 1 onion and 1/2 cup green pepper until soft. Add 1 pound of lentils (usually one bag) and coat in oil. Add 2 cups vegetable broth and simmer until the lentils are done but still have a bite to them. Meanwhile, slice 2 cups of ... continue reading...
