Peppermint bark is one of my favorite treats. I love the combination of mint and chocolate together, but I have only ever seen it around the holidays and it uses the red and white peppermints. The colors are pretty synonymous with Christmas.
I wanted to make a variation that was associated with Hanukkah and the colors that come to mind are white and blue. Luckily, OhNuts.com (my go to nut and candy shop) has everything organized by color so shopping for Hanukkah is easy. I got blue sanding sugar and chocolate mint lentils for this recipe.
You can easily melt the chocolate in the microwave slowly, but I chose to heat them slowly over a double boiler – which is basically just a bowl with the chocolate in it, over a sauce pot that has a little bit of simmering water in it. This allows you to have more control, and it is less likely that you would burn the chocolate.
It also makes a great little packaged homemade gift for a teacher or co-worker. You can stack them up in clear cellophane bags and tie them up with a festive ribbon! I am just going to bring them into work in a jar and have people help themselves.
