Peppermint bark is one of my favorite treats. I love the combination of mint and chocolate together, but I have only ever seen it around the holidays and it uses the red and white peppermints. The colors are pretty synonymous with Christmas.
I wanted to make a variation that was associated with Hanukkah and the colors that come to mind are white and blue. Luckily, OhNuts.com (my go to nut and candy shop) has everything organized by color so shopping for Hanukkah is easy. I got blue sanding sugar and chocolate mint lentils for this recipe.
You can easily melt the chocolate in the microwave slowly, but I chose to heat them slowly over a double boiler – which is basically just a bowl with the chocolate in it, over a sauce pot that has a little bit of simmering water in it. This allows you to have more control, and it is less likely that you would burn the chocolate.
It also makes a great little packaged homemade gift for a teacher or co-worker. You can stack them up in clear cellophane bags and tie them up with a festive ribbon! I am just going to bring them into work in a jar and have people help themselves.
Ingredients
- 1 -11.5 ounce bag (Dark, semi-sweet or milk) chocolate, melted (depends on your preference)
- 1 – 11.5 ounce bag white chocolate, melted
- 1 cup, approx of Chocolate mint lentils, crushed (in a ziploc bag with a meat mallet)
- 1/4 -1/2 cup approx of blue sanding sugar, for dusting
Instructions
- Cover a 9×13 baking dish with parchment paper and set aside.
- Melt your dark, semi-sweet or milk chocolate over a double boiler ( just a bowl with the chocolate in it, over a sauce pot that has a little bit of simmering water in it.) Using an offset or regular spatula, spread evenly over the parchment paper. Be sure to work quickly as it can cool and harden the chocolate.
- Directly after, in another bowl, melt the white chocolate and spread over the dark chocolate. You can also just drizzle a bit with a spoon for a different look. Immediately, sprinkle the crushed chocolate ”chocolate ”mint all around, and top with the blue sanding sugar for some shine.
- Place in freezer for approximately 15 minutes. Take out and break off random pieces by hand, or with two hands on a chef knife
