Crispy Artichokes & Horseradish Dip

The superbowl 50 is next weekend and while I have never really been into football, I love the fact that it is another excuse to get friends together and make food! I was trying to come up with something that I could make ahead of time and freeze in order to bring to our friend’s house this year, but being as I just entered the third trimester of my second pregnancy, I wanted something a little less complicated. While searching around, I came across this delicious sounding appetizer from Health Starts in the Kitchen

artichoke2I had the ingredients on hand, so I just had to make it and share it with you for a superbowl appetizer idea.

Hayley from healthstartsinthekitchen  bakes her artichokes, but also suggests that frying them up can make them even crispier. Let’s face it, the superbowl is not really a time that you are worried about the healthiest option, but
what’s most delicious.

 Even Eliana was interested to see what I was taking pictures of…so she came by to try it. (Let’s just say it was a little   too sophisticated for her almost 4 year old palate!) 

 

Crispy Artichokes & Horseradish Dip
Author: The Kosher Tomato – adapted from healthstartsinthekitchen.com
Ingredients
  • 9 oz box, frozen artichokes or jarred (rinsed and patted dry)
  • Approx 1 Tablespoon olive oil
  • Dip:
  • 1/2 cup mayonnaise
  • 1 Tablesoon prepared horseradish
  • 1/4 lemon, juiced
  • 1 tsp garlic, minced
  • salt & pepper to taste
  • water to thin out, ( if necessary)
  • Hot sauce, optional
  • Toothpicks, optional
Instructions
  1. Thaw artichokes overnight and pat them very dry ( to ensure they crisp up)
  2. Heat olive oil in a large, non stick frying pan over medium heat and place the artichoke hearts face down. (Do not move the pan around!)
  3. Once you see the edges become golden brown, you can flip them over. Once you’ve reached desired crispiness, blot on paper towels and sprinkle with salt

    For Dip:
    Mix all ingredients together and thin out with water if necessary. Serve with toothpicks if desired and enjoy!
