Turkey & Barley Hash

 

Last night for dinner, we had roasted turkey thighs, cooked barley and a salad. It was a pretty “blah” meal…but we both had a hard week and I really was not in the mood for anything too elaborate. Today for lunch, I had an idea of how to use the left overs in a more exciting way.

I had left over turkey and barley. I took the leftover cooked turkey off the bone and diced it up. I grabbed half a red onion, and some red and green peppers and also diced them up. For spices, I chose cumin, chili powder, turmeric and a touch of cinnamon. 

First, I cooked the onions and peppers (the aromatics) in a bit of olive oil until soft. Then I added the cubed turkey and just let it sit and let it get a nice golden brown crust. At that point, I added the spices so they could cook along while browning the turkey. (Don’t forget salt!)




After I achieved that beautiful color and smelled the spices permeating the room – I folded in the cooked barley.



I had some fresh cilantro in the fridge that I thought would complement this dish nicely – and add some much needed color.

It was truly delicious! It was a great way to take a bland meal and give it exotic spices and make it very flavorful. If you decide to make this from scratch, you can break up the steps into two different days.  Oh – I recommend eating this with a spoon – so you can get a bit of everything in every bite!
