Slow Cooked Chicken + Beef Meatballs

It’s back to school and I can’t believe my daughter started KINDERGARTEN!

Where has the time gone? What I have come to realize is that aside from wanting to have quick meals on a Monday night when I jet out for a zumba class, I really need to start shifting gears and start making easier dinners in general. It’s a challenge to cook while my kids need my attention.

Crockpot dinners that are successful are a life saver! In my experience (which has not been much with the crockpot, because I am trained with the stove/oven) there are only about a handful of crockpot meals that really work. I don’t think searing something ahead of time really counts, but I’ll consider it. Hit me up with your recipes!!

I saw an interesting mix of ground chicken and ground beef at the grocery and wanted to give it a shot. It’s like the equivalent of diluting a really sugary drink with water: you don’t feel AS bad having that fatty beef if there is some lean chicken in there? am I right?!

My mom always used to make delicious meatballs when I was growing up – with green beans tossed in the sauce and served over yellow rice. (She’s not into white rice) So, here’s my version, over turmeric quinoa. Throw the green beans in last-minute until they turn green – but not mushy.

Ingredients

  • 1 pound mixed grind (chicken & beef mix) you can also just mix this yourself!
  • 1 teaspoon kosher salt
  • 10 turns of freshly cracked black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon paprika
  • 1 1/2 cup jarred tomato sauce (I always use Victoria's marinara sauce)
  • 1/8 cup water
  • 1 heaping handful of green beans trimmed
  • Quinoa, for serving

Instructions

  1. Mix the meat mixture with all the spices and form balls approximately 1 1/2 - 2 inches in diameter. Try not to over handle the meat as it can get tough.
  2. Add to crock pot and pour marinara sauce and water over. Mix well.
  3. Cover and cook on low for 8-10 hours.
  4. Before serving, throw your green beans in the crock pot and allow them to turn bright green and soften a bit. Serve over quinoa.
