My mom is a fantastic cook. However small her repertoire, she just has that ability to cook with feeling. She knows flavor.
I’ll never forget the stories she always would share about how she didn’t learn cooking from my grandmother, (Mamy Lucy) because she remembers was coming home from school and seeing spaghetti strands against the wall. Apparently, Mamy Lucy thought this would help her determine if the pasta was ready!
My father taught my mother to cook, and although they are no longer together – I am grateful for what he has shared with her since I was able to enjoy it growing up.
Here, is one of the simplest things that my mom would often make for us. I only make it during the summer since the tomatoes are juicy and at their best.
Maybe I love tomatoes because they originated in South America and that’s where my parents are from. Maybe it’s because of their inviting color, or their versatility.

I used Campari tomatoes and apple cider vinegar. This is a great snack, or even just a quick salad instead of putting all the other ingredients together for a weeknight meal.
