Cinnamon Apple Cake

Around this time of year, everywhere you go, it’s PUMPKIN this and PUMPKIN that! Don’t get me wrong – I love me some pumpkin, but we must not forget the crisp and delicious apple.

I’ll admit it, I am not one of those people who like apples baked into anything – I kind of like them for what they are: CRISPY and refreshing apples. I would not pay attention to an apple turnover, or be impressed with an fried wonton “purse” filled with baked apples, nor would I even bat an eye to an apple pie.  
This recipe however, changed that.

retty straight forward recipe, from Pinch of Yum. It doesn’t call for a lot of steps (I like that!) 


I modified it by adding a touch of apple cider to the batter, because it was very sticky and I had it on hand. (from making the Pomegranate Pear Punch ) I also added chopped walnuts. I believe the crunch compliments the cinnamon sugar “crunchy” mouth feel of the topping. I am happy to say that I brought some into my day job, and it was a hit! (Thanks to those who may be reading)


With Thanksgiving next week – this is a great dessert whether you are hosting or need something to bring.

Moist & Crunchy Cinnamon Apple Cake

Ingredients

  • 1½ cups brown sugar
  • ⅓ cup oil
  • 1 egg
  • 1 cup buttermilk (you can sub milk & vinegar, or plain yogurt & milk)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 2½ cups flour
  • Spiced apple cider - just enough to thin out the batter
  • 1½ cups SLICED apples (I used Ambrosia & Gala)** I think slicing them thin (I did not peel them) makes a world of difference.
  • 1/4 cup chopped walnuts
  • ½ cup sugar
  • 1 tsp cinnamon
  • 1 Tbsp butter

Instructions

  1. Preheat oven to 325.
  2. Mix all ingredients (except the last 3)
  3. Pour into bundt pan or 9 x13 pan - sprayed with pam. (Wipe all messy edges so it doesn't burn)
  4. Combine last 3 ingredients to make a topping and sprinkle it evenly over the batter.
  5. Bake for 45 minutes.
