Carrot + Date Bars

I came across a granola bar with dates in it from one of my favorite health and fitness bloggers, Sarah – from Sarahfit.com

In her version, the date and raisin mixture is sandwiched between two layers of the oat mixture, which I might try next time because it keeps the gooey part in one spot. These are just as delicious!

The dates are an awesome addition because they add sweetness without added sugar. Try mixing your favorite fruits and nuts and see what you come up with!

Carrot + Date Bars

Ingredients
  • Carrot & Date Bars
  • 1 cup dates, pitted
  • 1/2 cup water
  • 2 cups oats
  • 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup almonds
  • 1/2 cup shredded carrots
  • 1 egg
  • 1/4 cup brown sugar
Instructions
  1. Preheat oven to 350F. Chop dates and add to a small saucepan with 1/2 cup water. Keep stirring on high until water has absorbed. Set aside.
  2. In a bowl, combine oats, flour, carrots, baking soda, cinnamon, almonds and salt. In a separate bowl mix egg and dates. Combine ingredients from both bowls and blend well.
  3. In a greased 9×9 pan, pat down the mixture evenly and bake for 20-25 minutes or until golden brown. Let cool.
