Asian Cabbage Slaw


My Hubby and I are always trying to find ways to save money – and get fresher ingredients so we thought to check out a farmer’s market in Columbus, NJ. Although there were not as many selections as there would be in a supermarket, you could smell the freshness in the air. There were a bunch of these small baskets that you could buy for about $3! I got some ingredients for an Asian slaw that I brought over to a friend’s bbq.
 
Asian Slaw
 
-1/4 head of red cabbage, shredded
-1/4 head of green cabbage, shredded
-1/4 head of napa cabbage, shredded
-1 cup shredded carrots
-1/4 cup sliced cucumbers
-1 red bell pepper, sliced thin
-Handful of toasted sesame seeds
-2 Tbsp cilantro, chopped
 
Dressing
 
-1/4 cup rice vinegar
-1/4 cup olive oil
-1/4 cup toasted sesame oil
-2 Tbsp brown sugar
Salt & pepper to taste
 
I like to dress this slaw ahead of time  (unlike most salads that you want to season right before you serve it) because it helps to wilt and soften up the cabbage. Right before we served it, we did add some crunchy chow mein noodles and it was a nice addition.

    That salad looks quite tasty! Love the crunchiness of the cabbage plus it's quite healthy. Perfect addition to a meal!! thank you for sharing Mamush!

    Those veggies at the Farmer's market look amazingly fresh and the prices are just incredible!
