Snapper is one of my favorite fish and it pairs well with citrus, especially when grilled.
This past December, the satsuma oranges were available in my local supermarket and they looked delicious. A cute lady walked next to me with a big smile and said ” These are soooo sweet” so this confirmed that I needed to try them.
Since the winter months are peak season for this fruit, you can always swap another citrus and it would be just as good. This is a simple marinade, grill and garnish.
Citrus Tequila Marinated Snapper
1 lb. Snapper
Seasonings to taste:
Salt & pepper
onion powder
garlic powder
chili powder
2 Tbsp olive oil
1/4 cup tequila
cilantro for garnish
orange segments for garnish
Marinade:
2 Tbsp honey
1 lime, juiced
1 cup satsuma orange juice
1 Tbsp ginger
1 Tbsp garlic, chopped
1. Season fish with seasonings to your taste and prepare the marinade. Put seasoned fish in marinade and allow to stand for about 15-20 minutes.
2. Get a grill pan very hot, then add olive oil and fish. Cook about 5 minutes on each side.
3. Deglaze the pan with tequila and allow to evaporate. Garnish with cilantro and orange segments
