Granola With Coconut & Olive Oil

Olive oil granola

Granola is delicious, but it can get expensive. Making your own version can be rewarding – and save you a few bucks.

This version is one that is similar to a recipe I once made for a client; she found it on the dining & wine section of the NY times. I like mine sprinkled on top of yogurt for a quick breakfast before work. If you mix it with fruit, it’s super filling. The yogurt is creamy and slightly sweet – while the nuts give a crunchy texture and an unmatched nuttiness. When combined with the chewy and sweet fruit, it’s absolutely delightful.

If you keep a bunch of different things on hand in your pantry, you could make a different granola every week! Some things that work great not mentioned below: flax seeds, sesame seeds, pistachio nuts, and dried apricots.

Don’t use amounts here – just mix as much as you wish. (It should have a rather sticky consistency) Flatten it out on a sheet pan with low sides and bake at 350 F until golden brown. Your house will smell like heaven. Like Martha Stewart says…It’s a good thing.

Rolled oats
Almonds,crushed
Golden raisins
Dried cranberries
Walnuts, crushed
Desiccated coconut (shredded)
Cinnamon
